Cranberry Dream Bars
This is a cookie I have been making every Christmas for a few years, especially since I had a Cranberry Bliss Bar at Starbucks. Do you have a favorite cookie? Please share!
Cranberry Dream Bars
1 cup butter softened
¾ cup granulated sugar
¾ cup firmly packed brown sugar
2 eggs
1 tsp vanilla extract
2 ¼ cups all-purpose flour
1 tsp baking powder
12-oz package white chocolate chips
6-oz dried cranberries
1 cup coarsely chopped pecans (or any nut)
Combine butter, granulated sugar and brown sugar in a large mixing bowl. Beat with an electric mixer on medium speed until well blended. Add eggs and vanilla and beat well. Combine flour and baking powder; gradually add to mixture. Stir in white chocolate chips, dried cranberries and nuts. Spread dough evenly in greased 15×10×1 inch baking pan (jelly roll pan). Bake in a preheated 350 degree oven 20 minutes or until light golden brown. Do not over bake. Cool in pan and cut into bars. Store in an airtight container. (Makes 4 dozen 1 ¼ x 2 ½ inch bars)
I make a cream cheese frosting since having Starbuck’s Cranberry Bliss Bars.
4 Tbsp (1/2 stick) softened butter
3 oz cream cheese
1 ½ cup powdered sugar
½ tsp vanilla extract
1/8 tsp salt
Combine in a mixing bowl until well blended. Frost cooled bars and sprinkle with chopped cranberries.
